Watermelon, Tomato, Feta and Basil Salad

I had watermelon gazpacho recently at the amazing Wolf Mountain winery in Dahlonega, Ga. The tomato and watermelon together were brilliant and so refreshing, as soon as I got home I threw 4 of my favorite things in a bowl (watermelon, tomato, feta and basil) to see what happened. It was absolute summer salad heaven!
This is obviously a very simple recipe, and the most important factor is great ingredients. Look at the gorgeous heirloom tomatoes below from my local farmers market. Enjoy…

  • 2 cups watermelon chunks
  • 1.5  cups halved cherry (heirloom) tomatoes
  • 3 tablespoons basil
  • Pinch of sea salt
  • 1 cup delicious feta cheese

(I use Noble Springs Dairy or Sheep’s Milk Feta from Trader Joe’s)

Mix all ingredients together and serve immediately, will keep in the fridge for a couple of days but SO much better tasting when it’s enjoyed fresh!

    I made this wonderful recipe! It’s beyond incredible, and so simple. The flavors work perfectly together, I placed it on top of fresh spinach for a hearty salad. My guests flipped over it! thanks Holly!
